Whole Foods and Processed Foods: It Is Not All or Nothing

The word processed is often used as if it describes one type of food. It does not. Washing lettuce, freezing peas, grinding wheat, pasteurizing milk, fermenting cabbage and manufacturing a packaged snack all change food. Understanding those differences is more useful than treating every processed food as nutritionally equivalent.

Almost all food is processed somehow

Processing can be as simple as washing, cutting, chilling or cooking. These steps can make food safer, easier to store and easier to prepare. A useful discussion therefore begins with what was done to the food and why.

Processing can preserve nutrition and reduce waste

Freezing and canning allow foods to be stored well beyond harvest. Pasteurization reduces microbial risk. Fermentation can preserve foods and create new flavours. Processing can therefore support food safety and year-round availability.

Processing can also substantially change a food

Some manufactured foods contain combinations of refined ingredients, sugars, sodium, saturated fats, flavours and other components designed for convenience or palatability. Health Canada recommends limiting highly processed foods that contribute excess sodium, free sugars or saturated fat.

Do not judge from one word

Frozen does not mean unhealthy. Homemade does not guarantee nutritionally balanced. Packaged does not tell you enough. Use the ingredient list, Nutrition Facts table and serving size to understand the actual product.

Convenience has a legitimate place

Frozen vegetables, canned beans, plain yogurt, whole grain bread and other convenient foods can make home meals easier. A realistic eating pattern often combines fresh ingredients with useful processed foods.

Think in patterns

One food rarely determines the quality of an entire diet. What matters more is the pattern repeated over time. Build meals mostly around nutritious foods while leaving room for practicality and enjoyment.

Think of processing as a spectrum

A bag of frozen peas and a confectionery product are both processed, but saying only that both are processed hides more than it reveals. Processing can range from cleaning and freezing to refining, combining, flavouring and reformulating. The type of processing, the resulting food and the role that food plays in the diet all matter.

This spectrum also explains why a rigid processed-versus-unprocessed rule is difficult to apply. Flour must be milled. Cheese is deliberately transformed from milk. Canned tomatoes are heated for preservation. These processes do not make the foods nutritionally interchangeable with every other manufactured product.

Why food is processed

Food processing solves real problems. Pasteurization improves safety. Freezing extends storage. Canning allows harvests to be eaten months later. Fermentation can preserve food and develop flavour. Milling turns grain into ingredients that can be cooked and baked. Packaging protects food during transportation and storage.

Processing can also make foods more convenient and commercially appealing. That is where reading the actual label becomes important. The fact that processing has a useful purpose does not mean every resulting product has the same nutritional profile.

What matters when comparing packaged foods

Start with foods that serve the same purpose. Compare two breads with two breads, not bread with broccoli. Check serving sizes, fibre, sodium, sugars and saturated fat where relevant. Then look at the ingredient lists. This gives you information about the actual products instead of judging them according to the word processed.

Canadian front-of-package nutrition symbols can provide another signal when a food meets or exceeds applicable thresholds for saturated fat, sugars or sodium. The symbol is useful information, but it does not replace the rest of the label.

Processing and an Alberta food system

Processing is also part of local agriculture. A vegetable grower may wash and package carrots. A butcher transforms an animal carcass into usable cuts. A dairy processor turns milk into cheese. A local baker turns Alberta grain into bread. A family may freeze berries or pressure-can appropriate garden produce.

Supporting local food therefore does not require opposing processing. It can mean understanding who did the processing, why it was done and what the finished food contains.

A practical way to use this information

Food labels and food rules are most useful when they help answer a question you actually care about. Decide whether you are trying to understand nutrition, origin, production methods, food safety, animal care, environmental practices or value for money. Those are different questions and one logo or marketing phrase rarely answers all of them.

When information is unclear, turn the package around, check the regulated label and ask the producer or manufacturer a specific question. When buying directly from a farm or market vendor, the opportunity to ask those questions is one of the advantages of buying closer to the source.
