Ingredients
- 1.5 lbs beef stew meat (cut into 1-inch cubes)
- 2 tbsp olive oil
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 4 cups beef broth
- 2 carrots (sliced)
- 2 potatoes (diced)
- 1 cup celery (chopped)
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 1 bay leaf
- 2 tbsp flour (for thickening, optional)
- ½ cup peas (added at the end for freshness)
Directions
1️⃣ Sear the Beef:
- Heat olive oil in a large pot over medium-high heat.
- Add beef and brown on all sides (about 5 minutes). Remove and set aside.
2️⃣ Sauté Vegetables:
- In the same pot, add chopped onion, garlic, and celery.
- Cook for 2-3 minutes until fragrant.
3️⃣ Build the Base:
- Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Sprinkle flour over the mixture and stir well (optional for a thicker stew).
4️⃣ Simmer:
- Pour in beef broth, add carrots, potatoes, and bay leaf.
- Return beef to the pot. Bring to a boil, then reduce heat to low.
- Cover and simmer for 90 minutes, stirring occasionally.
5️⃣ Final Touches:
- Remove bay leaf and stir in peas. Simmer for another 5 minutes.
- Adjust seasoning as needed.
6️⃣ Serve & Enjoy!
- Ladle into bowls and serve warm with crusty bread.
