Ingredients
- 1 cup cooked quinoa
- ½ cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ¼ cup feta cheese, crumbled
- ¼ cup chickpeas (optional)
- 1 tbsp sunflower seeds
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp salt
- ¼ tsp black pepper
Directions
1️⃣ Cook the Quinoa:
- Rinse the quinoa under cold water.
- Cook according to package instructions (typically 1 cup quinoa to 2 cups water, simmered for 15 minutes).
- Fluff with a fork and let it cool slightly.
2️⃣ Prepare the Vegetables:
- Halve the cherry tomatoes and dice the cucumber.
3️⃣ Assemble the Bowl:
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, chickpeas, and sunflower seeds.
- Crumble the feta cheese on top.
4️⃣ Make the Dressing:
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
5️⃣ Toss & Serve:
- Drizzle the dressing over the quinoa mixture and toss everything together.
- Serve immediately or refrigerate for a chilled quinoa salad.
