Ingredients
- 1 large head of cauliflower, broken into florets
- 3 cups of sharp cheddar cheese, grated
- 1/4 cup of butter
- 1/4 cup of all-purpose flour
- 2 cups of milk
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 1/4 tsp of nutmeg (optional)
- 1/2 cup of breadcrumbs (optional for topping)
- 1/4 cup of grated parmesan (optional for topping)
- 2 tbsp of melted butter (optional for topping)
Directions
- Preheat the Oven: Start by preheating your oven to 375ยฐF (190ยฐC).
- Blanch Cauliflower: Bring a large pot of salted water to boil. Add the cauliflower florets and cook for 5-6 minutes or until slightly tender. Drain and set aside.
- Prepare the Cheese Sauce: In a separate pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, being careful not to let it brown. Gradually whisk in the milk. Continue to whisk until the sauce thickens and starts to bubble. Remove from heat and stir in 2 cups of the cheddar cheese. Season with salt, pepper, and nutmeg.
- Combine Cauliflower and Sauce: Place the blanched cauliflower in a baking dish. Pour the cheese sauce over the cauliflower, ensuring it’s well coated.
- Optional Topping: In a bowl, combine the breadcrumbs, parmesan, and melted butter. Sprinkle this mixture, along with the remaining cheddar cheese, over the cauliflower and sauce.
- Bake: Place the baking dish in the oven and bake for about 25-30 minutes or until the top is golden brown and bubbly.
- Serve: Remove from the oven and let it cool slightly. Serve warm and enjoy!
