Lion’s Mane Mushroom Stir-Fry with Vegetables

1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and sliced onion to the skillet and sauté for 1-2 minutes until fragrant and the onion starts to soften.
3. Add the Lion’s Mane mushroom slices to the skillet and stir-fry for about 3-4 minutes until they start to brown and become tender.
4. Add the red bell pepper, carrot, snow peas, and broccoli to the skillet. Continue to stir-fry for another 4-5 minutes until the vegetables are crisp-tender.
5. In a small bowl, whisk together the soy sauce, oyster sauce (if using), and sesame oil. Pour the sauce mixture over the vegetables in the skillet and toss to coat evenly.
6. Season with salt and pepper to taste. Stir-fry for an additional 1-2 minutes to heat through.
7. Remove from heat and garnish with sesame seeds and chopped green onions, if desired.
