Ingredients
- 1 Lion's Mane mushroom, sliced
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup snow peas, ends trimmed
- 1 cup broccoli florets
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- Sesame seeds, for garnish (optional)
- Green onions, chopped, for garnish (optional)
Directions
Lion’s Mane Mushroom Stir-Fry with Vegetables
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and sliced onion to the skillet and sautΓ© for 1-2 minutes until fragrant and the onion starts to soften.
- Add the Lion’s Mane mushroom slices to the skillet and stir-fry for about 3-4 minutes until they start to brown and become tender.
- Add the red bell pepper, carrot, snow peas, and broccoli to the skillet. Continue to stir-fry for another 4-5 minutes until the vegetables are crisp-tender.
- In a small bowl, whisk together the soy sauce, oyster sauce (if using), and sesame oil. Pour the sauce mixture over the vegetables in the skillet and toss to coat evenly.
- Season with salt and pepper to taste. Stir-fry for an additional 1-2 minutes to heat through.
- Remove from heat and garnish with sesame seeds and chopped green onions, if desired.
- Serve the Lion’s Mane Mushroom Stir-Fry with Vegetables hot alongside steamed rice or noodles.
